It's bacon in a waffle! (And gluten and dairy free!) Here's a recipe adapted from the Joy of Cooking.
Bacon cornmeal waffles
Heat a waffle iron.
Combine:
2 tablespoons golden flax seed (or 2 beaten eggs, if you
prefer)
1 3/4 cups almond milk, water, or milk
1 cup brown rice or wheat flour
2.5 tsp baking powder
1T maple syrup
1/2 tsp salt
Fold in:
1 C yellow cornmeal
Add:
1/4 C shortening
Cut into halves or quarters: 6-12 slices of bacon. (I cook
the bacon for about 1 minute first in the microwave, because otherwise it doesn’t
always cook thoroughly enough in the waffles.)
Pour the batter onto the waffle iron and place a few slices
of bacon on top. Cook until you can remove the waffle without it sticking to
the waffle iron.
