Kelly, a fellow alumna from Hillsdale College, can't eat wheat, dairy, eggs or soy. Among other things, she was asking me about good breakfast foods and portable snacks that she can eat. I came up with these date balls, which I like to eat for breakfast in the car. They're sweet and nutritious and a good energy boost around snack-time or breakfast-time.
1 c. chopped dates
1 tablespoon flax meal
1 tablespoon honey
1 teaspoon vanilla
3 cups rice cereal (or your other favorite cereal, slightly crushed)
1/2 cups chopped nuts (optional)
Flaked coconut (optional)
Combine dates, flax, honey, and about 2 tablespoons of water in a heavy saucepan. Cook over low heat stirring for a few minutes until the honey is dissolved and you have a gooey mixture. Pour over nuts and cereal in a large bowl and quickly combine until the cereal is evenly coated. Quickly shape into small balls and roll in coconut.
